Mango Berry Icy Poles

The perfect Summer treat that you can whip up in no time. Switch out the mango for whatever summer fruit you fancy, such as . I purchased the icy pole moulds from Big W, however I have also seen similar ones at Kmart and Ikea, or speciality cook shops. If you can’t find them, some small plastic containers and wooden icy pole sticks will also do the trick.

Ingredients

  • 1 mango, flesh scooped out
  • 1/2 cup coconut milk or water or greek yoghurt
  • 1 lime, juiced
  • 1/2 cup chopped berries (eg. strawberry or raspberry)

Instructions

  1. Place mango, your choice of liquid, and lime juice in a blender. Process until smooth.
  2. Stir through chopped berries, and pour into icy pole moulds.
  3. Place in freezer until set, and enjoy!
  4. Run the under hot water to release them from the moulds.
