Caramel Slice {gluten free}

This is one of the first things I posted on my instagram back in 2015. When I first started this crazy journey, and I’m still here, loving sharing my gluten free experiences with others and learning from others too. So I thought four years later it’s about time I made it again.

This slice is absolutely delicious it’s hard to stop at one piece.  I think I need to make it again, not to eat it or anything, just to take more photographs. If one happens to fall in my mouth well….

Caramel Slice {gluten free}

Ingredients

  • 1 cup (150g) gluten free plain flour
  • ½ cup (110g) brown sugar
  • ½ cup (40g) desiccated coconut
  • 125g butter, melted
  • 100g butter, extra
  • 2 x 395g cans condensed milk
  • ⅓ cup (80mL) golden syrup
  • 200g dark chocolate
  • 1 tbsp vegetable oil

Instructions

  1. Preheat oven to 180°c/160°c fan forced. lightly grease a 18cm x 28cm pan and line with baking paper.
  2. in a medium bowl, combine gluten free flour, sugar and coconut. Add melted butter and mix well. Press mixture firmly into prepared pan, use the back of a spoon to help.
  3. Bake for 15-20 minutes until lightly browned, and allow to cool.
  4. Place extra butter, sweetened condensed milk and syrup in a medium saucepan. Stir over low heat until smooth.
  5. Pour caramel over biscuit base and bake for 20-25 minutes until golden. Remove from the oven and allow to cool.
  6. Melt together dark chocolate and oil, stirring until smooth, pour evenly over slice. Allow to set before cutting.
